Vegetarian burrito with hummus Ciceris Originale! The most delicious Mexican roll easy to prepare!

The vegetarian burrito with hummus is the reinterpretation of the very famous typical dish of the Mexican tradition, which is usually very tasty and filled with beans.

In all the cuisines of the world it is possible to find the ancient combination between legume and cereal in all its forms. We treasure the wisdom of the ancients and revolutionize this fast, cheerful and versatile dish!

Ingredients for 2 people:

2 wholemeal tortillas for burrito
1 jar Ciceris Originale with turmeric, paprika and lemon
a cup of diced vegetables (frozen mixes are fine too)
1 tablespoon of oil
salt, pepper and chilipepper for those who want a spicy flavour :)

 Burrito vegetariano e Hummus

Method:

Prepare the diced vegetables by roasting them in a pan with a tablespoon of oil. We used yellow and orange carrots, green beans, cauliflower and lentils.
Add salt, pepper and chilli if you like.

Heat the tortillas in a pan without letting them dry out (as soon as they make a hint of bubbles, remove them from the pan).

Spread a generous layer of hummus Ciceris Originale leaving the edges of the tortillas free. Put the vegetables in the center and flatten them well, so that they "sink" into the hummus.

Fold the bottom edge up, then close the left side back to the center and then the right side. Press them lightly, then transfer them back to the pan or toast machine.

After 2 minutes on low heat they are crunchy and ready to serve!
